Why does the width of root and stem increase in plants?

Root and stem of plants have one kind of lateral meristematic tissue that resides parallel to the branches of the plant. For example - cork cambium, interfascicular cambium, and vascular cambium, etc. These tissues are mainly part of secondary meristematic tissue. Mitosis cell division takes place in these regions and hence the width of the root and stem of the plant increases.
